Vada Rassa
One of the very
popular breakfast dish similar to Misal Pav.
In misal pav is made up of moth beans and spicy
curry i.e. rassa. Instead of moth beans here we add potato vada or bonda in spicy
curry. Yummm:-)
Ingredients:
To make potato vada/
bonda:
Potato medium size
boiled and mashed 4
Green chilli 3 +
Ginger 1 piece medium + Garlic 5 cloves (blend all together in blender)
Coriander finely
chopped
Curry leaves 4 to5
Turmeric powder 1/2 tsp
Asafoetida 1/2 tsp
Salt to taste
Mustared seeds 1 tsp
Oil to fry and to
saute the potato filling
Soda bicarbonate
To make Rassa/ Curry:
Onion 2( Medium) sliced
Tomato 2(medium) diced
Dry Coconut grated 1Tbsp
Cloves(laung) 2 to 3
Cardamom 2
Garlic 3 to 4cloves
Ginger 1/2 piece
Garam masala 1 and 1/2 tsp
Garam masala 1 and 1/2 tsp
Red Chili powder 1 Tbsp
Kashmiri chili powder 1 tsp
Turmeric Powder 1/2 tsp
Curry leaves 5 to 6
Coriander
Cumin seeds 1/2 tsp
Salt to taste
Oil 2 Tbsp
Garnishing and serving:
Onion finelly chopped 1 cup
Tomato finelly chopped 1/2 cup
Coriander finely chopped
Farsan 1cup
Method:
- Potato vada/ bonda:
For Filling:
- Heat a pan add oil, mustared seeds, curry leaves, green chilli+ginger+garlic paste saute for a minute. Then add asafoetida, turmeric powder mashed potato, salt and corriander. Mix well and keep aside to cool them completely.
For cover :
- In a mixing bowl add gram flour, turmeric powder, salt, asafeotida and add water to make smooth pouring consistency batter. Whisk well to avoid lumps.
For Frying:
- Make medium sized balls of potato filling.
- Take a frying pan, add oil and let it heat for frying.
- By the time add a pinch of soda bicarbs in batter and mix well.
- Dip potato balls well into batter and add them to hot oil for frying fry till get golden brown color.
- And remove them on tissue papper to soak excess oil.
2.For curry or rassa:
- Heat up pan on a medium flame, add a tsp oil add cardamom, clove, cumin seeds, curry leaves fry nicely then add sliced onion and sauté till it gets light brown color.
- Then add dry coconut roast it, til it gets light golden color.Take out all mixture and add to blender and also add tomato dices, garlic cloves, coriander to the blender and grind to make smooth and fine paste.
- Heat up oil in a pan, add all mixture paste, then add turmeric powder, chili powder,Kashmiri chili powder, garam masala,goda masala and sauté till it get nicely fry(cook till oil starts to separate from masala).
- Add water, salt to taste and bring it to boil. Now curry is ready.
3.Garnishing and
Serving:
- Take a serving bowl add potato vada, farsan, chopped onion, chopped tomato, coriander and pour curry squeese little lemon juice and njoy with indian style pav or bread.
