Shev Curry/ Shev Bhaji

Ingredients:
Thick shev/ Bhavnagari
Onion 2( Medium) sliced
Tomato 2(medium) diced
Dry Coconut grated 3 Tsp
Seasonings:
Cloves(laung) 2 to 3
Cardamom 2
Garlic 3 to 4cloves
Goda Masala 1 tsp
Onion garlic masala ( Kanda lasun masala) 2 tsp
Red Chili powder 1 Tsp
Turmeric Powder 1/2 tsp
Curry leaves
Coriander
Cumin seeds
Salt to taste
Oil 2 Tsp
Method:
- Heat up pan on a medium flame, add a tsp oil add cardamom, clove,cumin seeds, curry leaves fry nicely then add sliced onion and sauté till it gets light brown color. Then add dry coconut roast it, til it gets light golden color.
- Take out all mixture and add to blender and also add tomato dices, garlic cloves, coriander to the blender and grind to make smooth and fine paste.
- Heat up oil in a pan, add all mixture paste, then add turmeric powder, chili powder, kanda lasun masala, goda masala and sauté till it get nicely fry(cook till oil starts to separate from masala).
- Add water, salt to taste and bring it to boil. Now curry is ready.
- Take curry into a deep bowl, add shev and chopped coriander leaves and serve with bread or roti.
- Use thick shev and not thin shev otherwise shev will get dissolved in curry.
- Add shev just before serving.
- Prepare this masala in bulk, keep it frozen and use whenever required to make any kind of curry and time saving too.
