Muthiya..(Bottle guard muthiya)

Ingredients:
Bottle Guard 2cups
Grated
Rice Flour 3 cups
Gram Flour/ Chickpea
Flour 2 Tsp
Whole Wheat Flour 2
Tsp
Red Chili Powder
1tsp
Asafetida 1/4tsp
Sugar 1tsp
Turmeric Powder A
Pinch
Green Chili, Ginger,
Garlic paste 1tsp
Salt to taste
Baking Soda 1tsp
Lemon 1/2
Tempering:
Oil 1 Tsp
Mustard Seeds 1/2tsp
Dry Red Chilies or
Green Chilies 3 to 4
Curry leaves 4/5
Sesame seeds 1/2 tsp
Method:
- Take a big bowl, add all flours , red chili powder, turmeric powder, asafetida, sugar, green chili garlic ginger paste, salt in a bowl mix well.
- Now add grated bottle guard (doodhi) mix well, add baking soda and squeeze lemon on it and mix everything nicely and knead into a soft dough without using water.
- Apply some oil on ur palm and divide the mixture into 2 to 3 equal portions. Shape into high cylindrical rolls.
- Make nice high cylinder rolls.
- Arrange the rolls on a greased steamer plate and steam in a steamer for 15 to 20 minutes.
- Once it is steamed, turn off the heat and remove the plate from steamer and rest it to cool.
- Cut the rolls into slices (medium slice not too thin or thick) and keep aside.
- Take flat medium size nonstick pan, Heat the oil in a pan; once oil get hot, add the mustard seeds, when the mustard seeds crackle, add the sesame seeds, curry leaves, dry red chilies or green chilies and sauté on a medium flame for a few seconds. Add the steamed muthiya (rolls) and shallow fry on a medium flame from both the sides till they turn light brown.
- Bottle guard muthiyas are ready to serve.
- Always serve hot with green chutney.
