Corn Spinach Pizza

Ingredients : Left over roti 3(small size) Sweet corn  kerne ls boiled 1 cup Spinach finely chopped 1 cup Onion 1 small lengthwise cut Pizza sauce 3 Tbsp Butter 2tsp Oregano 2 tsp Chilli flax 1/2 tsp Salt to taste Mozerella cheese grated 1/2 cup Method : For topping : Heat a pan, add butter then add onion sauté for a minute then add spinach and boiled corn kernels mix them well. Add oregano chilli flax and salt mix everything nicely and keep it aside to cool down. Place roti on a clean surface, spread pizza sauce evenly over roti, then add toppings and cheese. Heat nonstick pan, apply some butter over it and place roti on it. Cover the pan with lid and cook on very slow flame for 5 to 7 minutes or till the base get browned. Dal chakolya / varan phal

Easy to make, tasty, nutritious and  one dish meal "Maharashtrial  recipe". Ingredients : For Chakolya/ Phal : Wheat flour 2 cups Salt 1/2 tsp Oil 1tsp Water For dal/ varan : Toor dal 1 cup Mustard seeds 1tsp Cumin seeds 1tsp Asafetida 1/4tsp Turmeric powder 1/4 tsp Chili powder 2tsp Goda masala 1tsp Curry leaves 5-6 Garlic cloves 4-5 Kokum 2 or tamarind pulp 2tsp (optional) Sugar or jaggery 1 Tbsp (optional) Coconut grated 1Tbsp Salt to taste Coriander pure ghee (sajuk tup) for serving Method : Wash toor dal thoroughly, add water, asafetida, turmeric powder and pressure cook untill it gets tender. Maharashtrian version of a gujrathi dish ie. Khandvi. Easy to make and tasty too. surali vadi can serves as side dish, snacks or appetizer. Ingredients : For stuffing : Coriander finely chopped 1/2 cup Coconut grated 1/2 cup   Green chili 4/5 Ginger small piece Salt For Batter : Besan 1 cup Butermilk sour 2 cups Turmeric powder 1/2tsp Asafetida 1/2tsp Salt to taste For Tempering : Oil Sesame seeds 1/2 tsp Mustard seeds 1/2 tsp Cumin seeds 1/2 tsp Curry leaves  4 to 5 Method : Stuffing : Grind ginger, green chilies coarsely in blender. Serving : 2 person Time : 5 min Ingredients : Yogurt 1 cup Water 2 cups   Ginger 1/2 tsp grated Roasted Cumin powder 1/4tsp Sugar 1tsp Green chili small 1 finely chopped Salt to taste Coriander to garnish Method : Take yogurt in a bowl, whisk it for a minute. आठवणीतील कार्विंग Vegetable and fruit carving एक सुंदर कला. Google वर शोध घेतला तर अगदी इतिहासापासून सविस्तर माहिती मिळते. पण खऱ्या अर्थाने food carving म्हणजे काय आणि त्याचं महत्व ते काय? तर food carving म्हणजे अन्नापादार्थावरील कोरीव काम. अशी एक कला कि ज्याद्वारे आपण भाज्या, फळं , अन्नपदार्थांना नवनवीन आकार देऊन त्यांना अधिक आकर्षक बनवू शकतो, त्याच प्रमाणे भूक वाढविण्यास आणि सोयीस्कररीत्या अन्नाचा आस्वाद घेण्यातही मदत होते. कधी decoration साठी तर कधी पाहुण्यांच्या अगत्यासाठी हि कला उपयोगात पडते. Vegetable Masala Khichadi

'Khichadi' a one dish meal recipe. Simple, easy and nutritious too. A good source of carbohydrates and proteins. Instant Gulab jamun/ BREAD Gulab jamun

Ingredients : For Gulabjamun : White Bread slice  9-10 Milk 1/2 cup For sugar syrup : Sugar 2 cup Water 1 cup Cardamom crushed 1/2 tsp Rose essence 1 tsp Method : For sugar syrup :  Boil sugar and water on low flame. Once sugar dissolved then add cardamom powder. Let boil the syrup until it becomes slightly sticky.  Check with your thumb and index finger. Add rose essence to syrup once it is little bit cool. For  Gulab jamun : Take off the edges of bread slices and   Soak bread slices in milk, squeeze excess milk. Keep aside for 15 min. meanwhile you  c an prepare sugar syrup. Then make small or medium size balls by rolling the dough between your plam. (Size depends on your choice but remember they double when soaked in syrup.) Serving : 3  Time :30 min Ingredients : Spinach blanched 1 and 1/2cup and 1/2 cup chopped Carrot 1 cup grated Green chilies 2 paste Garlic 4 cloves paste Cumin Seeds 1tsp Sesame 1tsp Whole wheat flour 2 cups Red chili powder 1/2tsp Turmeric powder 1/4tsp Asafetida pinch Oil 1tsp to knead the dough Oil or butter to roast the parathas Salt to taste Method : Blanched spinach puree : Wash spinach leaves and soft stem thoroughly in cold water. Then Boil 2 cups of water, turn off the gas flame. Now  add spinach leaves with soft stems, cover it with lid and keep it for 5 to 7 min. then drain out water and make puree of blanched spinach with the help of blender . Servings :  2-3 person Tim e : 10 min INGREDIENTS : Curd/ yogurt (sour) 1cup Water 2 cups Gram flour 2 Tsp Ginger 1/2 inch  paste or grated Garlic clove 2-3 paste or finely chopped Green chilies 2 or 3 Finely Chopped Sugar 1tsp Mustard seeds 1/2 tsp Cumin seeds 1/2 tsp Turmeric powder 1/4 tsp Asafetida 1/2 tsp Curry leaves 5-6 Oil / Ghee 1 Tsp Coriander finely chopped salt to taste Method : In a bowl add gram floor and yogurt mix well to form a smooth paste. Then add water mix all together. Heat a pan, add oil or ghee, once it gets hot add mustard seeds, let them crackle. Then add cumin seeds, curry leaves, chilies, ginger and garlic, sauté for   few seconds then   add asafetida, turmeric powder. गाजराची कोशिंबीर

Serving : 2/3 person Time : 15 min साहित्य : गाजर ( मध्यम ) 2 किसलेले हिरवी मिरची २ ते ३ कढीपत्ता पानं २/३ लिंबाचा रस १/२ टेस्पून साखर १/२ टीस्पून तिळ १/२ टेस्पून तेल १टेस्पून जीर , मोहरी १/२ हिंग चिमुटभर मीठ चवीनुसार कोथिंबीर कृती :   एका बोव्ल मध्ये किसलेले गाजर (धुवून,सोलून) घ्यावे. फोडणीसाठी तेल गरम झाल्यावर त्यात मोहरी, जिरे, तिळ, कढीपत्ता, हिरवी मिरची, हिंग घालावं सगळं छान परतवून हि फोडणी गजरावर घालावी. नंतर त्यावर लिंबाचा रस, कोथिंबीर व मीठ , साखर घालावी. कोथिंबीर घालून सर्वं करावी .

Dashmi

"Dashmi" a traditional Maharashtrian dish. Also known as 'tikhat poli'. Nutritious and easy to make. Best during travelling as it lasts up to 2 to 3 days.   Ingredients : Wheat flour 2 cups Red chili powder 1 1/2 tsp Turmeric powder 3/4 tsp Sesame seeds 1 tsp Carom seeds (ajwain) 1/2 tsp Asafetida 1/2 tsp Coriander chopped (optional) Oil/ ghee for greasing Salt to taste Water Method : Take a bowl, add wheat flour followed with all ingredients except water. Mix everything nicely. Now add water to make soft dough (like for roti) and knead well. Make small balls of the dough and roll them like chapati. Heat a pan and roast them nicely (same like roti) flipping on the other side. Grease them with oil or ghee.  Dashmi is ready to serve.  Serve with pickel, peanut chutney or with ghee.

Servings : 30 scoops Time : 15 Min Ingredients : Tostito's Scoops (Basket) Potato 2 (medium) boiled and mashed Tomato 2 Finely chopped Onion 1 Finely chopped Mint Chutney 1/2 cup Tamarind Chutney 1 cup Shev (Fine) 1/2 cup Chat Masala 1 Tsp Green peas, sweet corn seeds, pomegranate seeds 1/2 cup Coriander Finely chopped Method : Take a big serving platter/ tray, Place 30 scoops. Fill each scoop with mashed potato followed by onion and tomatoes, Sprinkle little bit chat masala, add pomegranate seeds, corn seeds, green peas. add mint and tamarind chutney. Garnish with shev and coriander. Sprinkle some more chat masala. And basket chat is ready to serve.   Tips : Easy, quick and tasty appetizer, starter or party snack . Substitute to tamarind chutney: Tomato ketchup +(amchur powder) dry mango powder+ salt/ rock salt + powdered sugar+ little water. Will give nice tangy taste to chat. Assemble the ingredients as per your wish.

Maharashtrian salad with yogurt. Generally called as " Koshimbir " in marathi or " pacchadi " in kannada.  Serves as a side dish. Serving : 3 to 4 Person Time : 10 to 15 Min Ingredients : Tomato 2 Finely Chopped Onion 1 Finely Chopped Green Chilies 2 chopped Curry leaves 2 to 3 Sugar 2 tsp Salt to taste Oil 1 Tsp Mustard Seeds 1/2 tsp Cumin Seeds 1/2 tsp Turmeric powder pinch of Asafetida pinch of Yogurt (Curd) 2 Tsp Peanut powder 2 tsp Coriander for garnishing Method : Take a bowl, add finely chopped tomato and onion. फोडणीची पोळी / कुस्करा / पोळीचे तुकडे

२ ते ३ जणांसाठी वेळ: १५ मिनीटे साहित्य : ७ ते ८ पोळ्या फोडणीसाठी : २ टेस्पून तेल,  चिमूटभर मोहोरी,  १/४ टिस्पून जिरे,  चिमूटभर हिंग,  १/४ टिस्पून हळद,  १ ते २ टिस्पून लाल तिखट,  २ कढीपत्ता पाने. १ कांदा, बारीक चिरलेला २ टेस्पून शेंगदाणे चवीपुरते मिठ   १/२ टिस्पून साखर   चिरलेली कोथिंबीर सजावटीसाठी कृती: १) पोळ्या मिक्सरमध्ये / हाताने बारीक कुस्करून घ्याव्यात. २) कढईत २ टेस्पून तेल गरम करावे. त्यात मोहोरी, जिरे,कढीपत्ता,शेंगदाणे व्यवस्थित परतावे मग त्यात, हिंग, हळद, तिखट घालून फोडणी करावी. त्यात कांदा घालून परतावे. ३) तयार फोडणीत बारीक केलेल्या पोळ्या घालाव्यात आणि परतावे. मिठ आणि साखर घालून २ मिनीटे मंद आचेवर वाफ काढावी. फोडणीची पोळी तयार झाली कि कोथिंबीर घालून गरमा गरम,  दही किंवा ताकासोबत सर्व्ह करावे.

Phodnichi Poli/ Kuskara/ Poliche Tukade

Serves : 2 person Time : 15 minutes     Ingredients : 6 to 7 leftover Chapatis 2 Tsp Oil 1/4 tsp Cumin seeds 1/2 tsp Mustard seeds Pinch of asafoetida 1/4 tspTurmeric Powder 1 and 2tsp Red Chili Powder  2 to 3 Curry Leaves 1mediumOnion Finely Chopped 2 Tsp Peanuts (optional) Salt to taste 1/2 tsp Sugar Finely Chopped Coriander. Method : 1) Take leftover chapatis crumble it with the help of mixer/ food processor, or simply with hands. 2) Heat 2 Tsp oil into a pan. Add mustard seeds, cumin seeds, curry leaves and peanuts fry it well, add onion saute till get light golden color. Then add asafetida, turmeric powder, red chili powder. 3) Add crumbled chapati, salt and sugar, mix wel. 4) covered and cook for 2 minutes. Garnish with coriander. Serve hot with curd or butter milk.
